Esteemed Readers, we continue our preparation for the Russian New Year.😊😊😊 The salad department is very rich so I offer you another two dishes that were favourite for the festive days. No matter the USSR, there was crab meat there. It was in small tins & its quality was perfect. It was expensive & appeared in shops just before the New Year but people might buy it as our economy was stable & the price did not change for years.
Russian Crab Salad Ingredients:
1 cucumber, 1 boiled egg, crab meat – 100 gr., boiled rice – 50 gr., 1 apple, mayonnaise sauce/yogurt – 1-2 tbsp.
You might prepare the rice & the egg before cooking to make it faster. Chop the egg & the cucumber. Take crab meat out of its tin, drain the liquid, dry with a paper towel. Cut it well. Pieces should be neither too small nor too big. Place everything into a serving dish, mix up well, add the rice. Grate the apple. Add mayonnaise/yogurt & serve. Voilà the salad Genya Lukashin from the movie “The Irony of Fate” admired so much.
The French Russian Salad Ingredients:
onion – 1-2 pcs., eggs -2 pcs., not sweet apple – 2 pcs., processed cheese or cream cheese – 20 gr., mayonnaise sauce – 2 tbsp.
PS: So called “French” things, which were originally invented in the Soviet Union, were extremely popular those days. This salad is not an exception. 🙂
Peel onions & pour them with boiled water or place them in a bowl with boiled water to make the taste softer. Boil eggs, peel them & chop well. Grate apples & chop well pieces of the processed cheese. Then prepare the serving bowl & make layers:
- Thick layer of cream cheese or pieces of processed cheese.
- Mayonnaise sauce.
